Classic Mac - N - Cheese [NOT Vegan]
Before Chef Claire started Mouth & Muscle she was a corporate chef for a cheese company... so she knows mac and cheese! This is the full fat, full dairy version of this dish. It is made the old fashioned way, with a classic mornay sauce (milk, thickened with a roux with cheese added). We use three cheeses, a Gryuere, an aged cheddar, and a little provolone for strech. The whole thing is topped with buttered bread crumbs. Food coma = 100% guaranteed! This is not healthy, bit it's the holidays, so who cares.Serves two.
