Vichyssoise [Vegan Option, Gluten Free]
In a classically French based culinary program the defining thing one must be able to make is vichyssoise. What seems like a simple potato leek soup, requires very specific skills that can easily be done wrong. Thankfully, Chef Claire passed that class. This is the classic French version of this soup... vegan style. We don't use cream to up the flavor, because our local potatoes and leeks do that for us. Topped with crispy onions, and soyrizo.
